Prepare the Cauliflower
1 small head of cauliflower (cut lengthwise in steaks)
1tbsp olive oil
Chopped ginger & garlic
1/4 cup water
5-6 black peppercorns
Salt to taste
For the Chickpea Flour (Pakora) Batter
3/4 cup chickpea flour
1/2 tsp crushed coriander seeds
1 tsp cumin seeds
1/4 tsp ajwain (carom seeds)
1 tsp Chaat Masala
1/2 tsp turmeric powder
Chopped green chilies to taste
Salt to taste
1/3 cup water (or as needed)
1/2 cup oil
To Drizzle before serving- Green Chutney, Tamarind Chutney
Add the cauliflower steaks along with oil, salt & pepper, ginger and oil to a Ziploc bag.
Set up the sous vides stick in a container filled with water. Set the cooking temperature to 185 F degrees for firm moist steaks. Lower the Ziploc bags into the water bath, you can use a clip to secure the bag to the side of the pot. Cook for 45 minutes depending on how thick the steaks are.
While the cauliflower is cooking, make the chickpea flour batter. In a bowl, mix chickpea flour with spices, chilies, and salt. Mix to combine. Add water to make a thick ribbon like batter. Keep ready.
Carefully remove the cauliflower from the bags (it will be very delicate). Pat dry using a paper towel. Let cook for 10 minutes. Dip and coat the steaks in the chickpea flour batter and shallow fry in hot oil. Serve the steaks immediately drizzled with chutney and sprinkle of chaat masala. .
