Sous Vide Indian Spiced Lamb Burgers
Ingredients
For the Lamb Patties
● 1 lb minced lamb
● 1 tsp roasted ground cumin
● 1.5 tsp roasted ground coriander
● 1/2 tsp garam masala
● 1/4 cup finely chopped onion
● 1 tbsp finely chopped ginger & garlic
● 2-3 thai bird chilies (or to taste)
● 1 tsp salt
For the Burger
● 4 burger buns
● Green chutney mixed with yogurt
● Crumbled Feta
● Sliced Onions, tomatoes, greens
Method
1. Mix all the ingredients for the burgers. Divide into equal portions and shape into patties. Layer the patties in a vaccum sealed bag. Alternatively, you can use Ziploc bags.
2. Set up the sous vide stick in a container filled with water. Select lamb option from the smart panel. Lower the sealed bag into the water bath, you can use a clip to secure the bag to the side of the pot. Let cook sous vide till the session is over.
3. Once done, carefully remove the patties and pat dry using a paper towel.
4. Sear the patties on a hot cast iron pan on both sides.
5. Build the burger by toasting the buns. Spread the chutney and layer with the patties, tomatoes and onions. Add greens and crumble feta on top. Enjoy!
