Seasoning

Dry the surface

Remove your steak from the vacuum-sealed bag and pat it dry with a paper towel and re-season with salt and pepper. It is important that you pat the steak dry so you will get a better sear.

Sear

The only thing left is to get a nice crust by searing it in a hot cast iron pan for a minute or two on each side. You can also sear on a hot grill if you prefer. Just make sure you get your grill or cast iron pan as hot as you can. This will really help get a crispy crust. Since the steak is already cooked in the middle all you are doing is getting the outside done to your liking also with Sous Vide you do not need to rest your steaks.
