To Sous Vide or not to Sous Vide - that really is the question. When it comes to cooking the perfect steak, which method achieves the best flavor while delivering consistent results? Can a Sous Vide steak really be better than one cooked on a grill? Using the KitchenBoss G320, we will highlight the features of cooking a ribeye steak with the Sous Vide cooker and what benefits it has over the more traditional grilling method.

While grilling a steak is a great method that can provide excellent flavor and a nice crust, there are some drawbacks. The biggest of course is getting the internal temperature of the steak right. If you keep the steak on the grill too long, you’ve overcooked it - resulting in a tough and chewy texture and unpleasant flavor. Remove the steak too early- and you end up with an undercooked or even raw steak that is not appetizing. There is also the constant tending to the grill to make sure the gas or charcoal is heating up the steak consistently.

The G320 with its precise time and temperature control will allow you to cook a steak exactly how you like every single time. It really is a fool-proof method that requires little practice. Using the KitchenBoss G320

The first thing you are going to do is season your steak lightly with salt and pepper and then vacuum seal it with the KitchenBoss vacuum sealer G210. You can also add a pad of butter and some herbs like thyme or rosemary. Adding the herbs and butter helps infuse more flavor during the cooking time. I tend to go with this option myself.

Place in pot

Next, you will need to heat up some water in a stockpot or container to your desired temperature and then choose the length of time you want to cook your steak. Everything on the machine is easy to use and can be dialed in with a push of a few buttons. The Sous Vide cooker brings the water up to temperature quickly and will hold it there for as long as you want it to.

Slow cooking

Place your vacuumed sealed steak in the water after it has come up to your desired temperature. I enjoy medium-rare and recommend cooking it at 130 degrees for 1-2 hours. Another nice feature about Sous Vide cooking is the flexibility to cook the steak for an hour or several hours depending on your schedule. The G320 will hold the steak at the exact temperature for as long as you need it until you are ready to eat!

Dry the surface

Remove your steak from the vacuum-sealed bag and pat it dry with a paper towel and re-season with salt and pepper. It is important that you pat the steak dry so you will get a better sear.

The only thing left is to get a nice crust by searing it in a hot cast iron pan for a minute or two on each side. You can also sear on a hot grill if you prefer. Just make sure you get your grill or cast iron pan as hot as you can. This will really help get a crispy crust. Since the steak is already cooked in the middle all you are doing is getting the outside done to your liking also with Sous Vide you do not need to rest your steaks. Sous Vide steaks are cooked more evenly than the traditional ones thanks to the airtight bags, so there’s no temperature difference between the core and the edges. Even after searing, only the outer edges can be hotter than the inside of the steak. All that’s left is to cut in and enjoy!

Sous Vide steak is better

Overall, you will find that your Sous Vide steak is perfectly cooked to your preferred temperature. You will also notice that the texture of the steak is more desirable and tender. That is because the KitchenBoss G320 cooks each steak slowly and evenly giving you restaurant-quality results each and every time. No longer do you have to consistently poke your steak with a thermometer and babysit it to make sure it’s at the right temperature. Now you can enjoy time with your friends or family doing the things you love and still be the hero at dinner. If you are looking to elevate your steak to a new level, definitely give Sous Vide a try with the KitchenBoss!
